☽ Lavender Cake and Glaze
A special recipe for all of you, as this recipe is my significant other’s favorite for me to make and fairly simple for the budding kitchen witch. I hope you enjoy, and I appreciate every last one of you.
Ingredients:
Cake -
- ¾ c milk
- 3 tbsp finely chopped culinary lavender
- 6 tbsp softened butter
- 1 c white sugar
- 2 eggs
- 2 c all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
Glaze-
- ½ c milk
- 1 tbsp dried lavender buds
- 1 c confectioner’s sugar
To Begin:
Cake -
- Preheat the oven to 325ᵒ F and grease/flour a 9 x 5 loaf pan.
- Combine the milk and lavender in a small saucepan over medium heat; heat to a simmer, then remove from the heat and allow to cool slightly In a medium bowl, cream together the butter and sugar until smooth. Beat in the egg until the mixture is light and fluffy.
- Combine the flour, baking powder and salt and stir into the creamed mixture alternatively with the lavender milk until just blended. Pour into the prepared pan.
- Bake for 50
minutes or until a wooden pick inserted into the crown of the loaf comes out
clean; cool in the pan and/or on a wire rack
Glaze -
- Place the milk in a saucepan over medium heat; when it starts to boil, remove the pan from the heat and add dried lavender buds.
- Let the mixture steep for 5 to 8 minutes, then strain. Whisk it into the sugar one tablespoon at a time until it is smooth and opaque
- Pour or
spoon onto the cooled loaf
